Building healthy soil from the ground up

At Mavronero Farm, every harvest begins long before the crops appear above the soil. It starts with building healthy, living ground capable of supporting plants naturally.

Earlier this year, potatoes were planted on the river terrace using a simple approach: healthy soil, careful irrigation and just two handfuls of mushroom compost. Rather than relying on large amounts of fertiliser, the goal was to improve soil structure and allow natural biological processes to do the work.

Several months later, the results are now visible beneath the surface.

A harvest that starts underground

Since June, the potato plants have been harvested as they naturally complete their growing cycle.

Each plant has produced clusters of healthy potatoes, demonstrating that productive crops are not only the result of good weather or irrigation, but also of healthy, biologically active soils.

The harvest serves as another reminder that what happens underground is just as important as what grows above it.

Why organic matter matters

Even a small amount of organic material can make a meaningful difference.

Mushroom compost adds valuable organic matter that helps improve soil structure, supports beneficial microorganisms and increases the soil’s ability to retain moisture.

Over time, these improvements create conditions where roots can develop more effectively and crops become naturally more resilient.

Rather than feeding only the plants, organic compost helps feed the entire soil ecosystem.
