The vibrant blooms dry naturally, and the characteristic aromatic seeds begin to mature.

At this stage, the fennel plants surrounding the farmhouse are ready for harvesting. Some of the seeds will be collected for herbal tea, while others will remain on the plants to support wildlife and allow natural regeneration.

Watching this transformation reminds us that every stage of a plant’s life contributes to the health of the ecosystem.

What is fennel?

Fennel (Foeniculum vulgare) is a perennial flowering plant belonging to the carrot family (Apiaceae).

Native to the Mediterranean Basin, it has been cultivated and gathered for thousands of years for its culinary, medicinal and ecological value.

It is easily recognised by its tall hollow stems, finely divided feathery leaves and large umbrella-shaped clusters of small yellow flowers.

Its pleasant anise-like aroma comes from essential oils naturally present throughout the plant, especially in its seeds.

The journey from flower to seed

After pollination, each tiny flower gradually develops into a dry fruit commonly known as a fennel seed.

Over several weeks the green seed heads slowly change colour as moisture decreases and the seeds mature.

When fully ripe, the seeds become firm, aromatic and ready for harvest.

If left untouched, many eventually fall naturally to the ground where they can germinate during the following growing season.

This natural cycle allows fennel populations to renew themselves year after year.

Read more in our blog />

Why harvest fennel seeds?

Fennel seeds have been used for centuries throughout Mediterranean cultures.

Traditionally they are harvested for:

herbal teas

culinary seasoning

seed saving for future planting

traditional herbal preparations

Their distinctive sweet, anise-like flavour makes them one of the best-known aromatic seeds in Mediterranean cuisine.

Supporting biodiversity before harvest

At Mavronero, harvesting does not begin immediately after flowering ends.

The plants are left standing long enough for pollinators to fully benefit from their flowers and for the seeds to reach complete maturity.

Throughout their flowering period, fennel provides nectar and pollen for many beneficial insects, including:

honey bees

solitary bees

hoverflies

butterflies

parasitic wasps

numerous native pollinators

These insects contribute to the ecological balance of the farm by supporting pollination and helping regulate pest populations naturally.

Harvesting at Mavronero

The fennel growing around the farmhouse develops almost entirely with natural rainfall and seasonal conditions.

When the seed heads have dried sufficiently, they can be collected by hand before the seeds disperse naturally.

Some seeds are harvested to prepare aromatic herbal tea, while others are intentionally left on the plants.

Allowing part of the seed crop to remain supports natural regeneration and provides food for wildlife, helping maintain healthy plant populations around the farm.

More than a medicinal herb

Although fennel is widely appreciated for its flavour and traditional uses, it also plays an important ecological role.

Its flowers support pollinating insects during one season.

Its seeds feed wildlife during another.

Its deep root system helps stabilise the soil.

Its presence increases plant diversity within the agricultural landscape.

Rather than serving a single purpose, fennel contributes to multiple ecological processes throughout the year.

Interesting facts about fennel

Fennel can grow over 2 metres tall under favourable conditions.

Every flower head contains hundreds of individual flowers.

Each mature flower head can produce hundreds of seeds.

The seeds contain aromatic essential oils, including anethole.

Wild fennel is one of the characteristic plants of Mediterranean landscapes.

The flowers are among the most attractive food sources for beneficial insects during summer.

Conclusion

The fennel growing around the farmhouse demonstrates how a single plant can support biodiversity throughout its entire life cycle.

From attracting pollinators with its bright yellow flowers to producing aromatic seeds for future harvests, fennel connects wildlife, traditional knowledge and sustainable farming.

At Mavronero, harvesting the seeds is not simply collecting another crop—it is part of working alongside natural seasonal rhythms and allowing every stage of the plant’s development to fulfil its ecological role.

Sources

<a
