It starts with living soil, carefully selected seeds and the patience to let nature follow its own rhythm.

During the autumn of 2025, we sowed carrots (Daucus carota subsp. sativus) and root parsley (Petroselinum crispum var. tuberosum) in one of the raised beds at Mavronero Farm. Over the following months, the bed gradually transformed into a diverse and productive growing space, demonstrating how regenerative cultivation supports healthy crops while improving the ecosystem beneath them.

These photographs document the early stages of the growing cycle, from preparing the bed and sowing seeds to vigorous plant development, highlighting the close relationship between soil health, biodiversity and sustainable food production.

Building healthy soil first

Every successful vegetable crop begins with healthy soil.

Before sowing, the raised bed was enriched with mature compost to improve soil structure, increase organic matter and encourage beneficial microorganisms. Rather than relying on synthetic fertilisers, regenerative farming focuses on creating living soils capable of supplying nutrients naturally.

Loose, well-structured soil is particularly important for root vegetables, allowing their taproots to develop freely while improving drainage and water retention.

Autumn sowing in the Mediterranean

Carrots and root parsley are cool-season vegetables that are well suited to Mediterranean autumn and winter conditions.

Sowing during autumn allows seedlings to establish gradually under cooler temperatures while benefiting from seasonal rainfall. This slower rate of growth reduces water stress and encourages the steady development of strong, healthy roots.

Root parsley germinates more slowly than carrots and often requires additional patience, but both species thrive when allowed to develop naturally throughout the cooler months.

Life beneath the surface

Much of the development of root vegetables remains hidden underground.

While green leaves capture sunlight above the soil, the plants gradually transport energy into their developing taproots, where nutrients are stored for future growth.

This underground process is largely invisible but determines the quality, health and resilience of the crop.

The vigorous foliage seen above ground is often an indicator of the healthy root system developing below.

A living raised bed

A regenerative raised bed supports far more than vegetables.

Alongside carrots and root parsley, companion crops, spontaneous vegetation and countless soil organisms contribute to a balanced ecosystem. This diversity helps protect the soil surface, encourages beneficial insects and supports the biological activity that keeps soils healthy.

Rather than aiming for perfect uniformity, regenerative gardening values ecological balance and resilience.

Every organism has a role to play.

Regenerative vegetable production

Growing vegetables regeneratively means improving the land while producing food.

Compost, minimal soil disturbance, diverse plant communities and healthy soil biology all work together to create more resilient growing systems.

Over time, these practices improve soil fertility, increase water retention, support biodiversity and reduce dependence on external inputs.

Every growing season strengthens the ecosystem beneath the crops.

Observations at Mavronero

These photographs document the development of one raised bed at Mavronero Farm during the 2025–2026 growing season.

From preparing the soil and sowing tiny seeds to the emergence of healthy foliage and the early development of the first roots, each stage illustrates the importance of patience, seasonal rhythms and living soils.

The raised bed also demonstrates how regenerative cultivation combines productive vegetable growing with biodiversity conservation and soil regeneration.

Interesting facts

Carrot (Daucus carota subsp. sativus)

Cultivated descendant of the wild carrot (Daucus carota).

Develops an edible taproot beneath the soil.

Thrives in loose, well-drained soils.

Best established during cool growing seasons.

Rich in beta-carotene, the precursor of vitamin A.

Benefits from steady, uninterrupted growth.

Root parsley (Petroselinum crispum var. tuberosum)

A variety of parsley cultivated for its edible root.

Closely related to common leaf parsley.

Prefers cool temperatures and fertile soils.

Germinates more slowly than carrots.

Produces both edible roots and aromatic foliage.

Widely used in Mediterranean and Central European cuisine.

Growing with nature

Healthy vegetable production depends on healthy ecosystems.

By improving soil biology, encouraging biodiversity and allowing natural ecological processes to function, regenerative gardening creates resilient growing systems capable of producing nutritious food while restoring the environment.

Every raised bed becomes more than a place to grow vegetables, it becomes a living ecosystem.

Conclusion

The development of carrots and root parsley reminds us that the most important processes in agriculture often take place beneath the soil surface.

Healthy roots, fertile soils and thriving biodiversity are all connected.

By caring for the soil first, regenerative farming creates stronger crops while building healthier and more resilient ecosystems for the future.

Sources

<a
